Moving email dirs to new server...

What is the best way to migrate email directories to new server?  I am moving from calvin to new server (can't remember name offhand).

Can i simply create the email accounts on the new server (once add-on domains are dropped / recreated) - and then move the directories?

I tried a test case this weekend, and it seemed like I couldn't see the email... but I might have made a mistake as I was doing it quickly.

Anyone have any pointers?
